Seasoned Onion and Mushroom Burgers: Perfect for a Cornish Beach Barbecue

Today, I’m sharing one of my favourite recipes: Mushroom Burgers with Garlic Butter and Seasoned Onions. They are perfect for those beach barbecues, and trust me, they will impress everyone!

Step 1: Make Your Seasoned Onions

First things first, let’s prepare the seasoned onions. These are the secret ingredient that will elevate your burgers from good to absolutely amazing.

Ingredients:

  • 2 tablespoons of ghee
  • 1 tablespoon of mustard seeds
  • 1 tablespoon of cumin seeds
  • A handful of scrunched curry leaves
  • 6 onions, thinly sliced
  • 2 teaspoons of turmeric
  • 3 tablespoons of apple cider vinegar
  • A small amount of brown sugar or coconut palm sugar
  • A couple of pinches of salt

Method:

  1. Heat the Ghee: In a large pan, melt the ghee over medium heat.
  2. Add the Seeds: Toss in the mustard and cumin seeds. Let them sizzle until they start to pop.
  3. Curry Leaves and Onions: Add the scrunched curry leaves and onions. Cook, stirring occasionally, until the onions are soft and golden.
  4. Seasoning: Sprinkle in the turmeric, vinegar, sugar, and salt. Mix well.
  5. Slow Cooking: For the best flavor, let the onions cook slowly. The longer and slower, the better. If you have a slow cooker, you can transfer them into it and let them cook for a few hours. These onions freeze well, so you can make a big batch and just pull out a portion every time you go for a barbecue.

Step 2: Prepare the Mushrooms with Garlic Butter

Next, we’ll prepare the mushrooms. These can be made in advance and stored in the fridge until you’re ready to cook.

Ingredients:

  • Softened butter
  • Garlic, crushed and chopped
  • Parsley leaves, chopped
  • A pinch of salt
  • Large mushrooms

Method:

  1. Make the Garlic Butter: In a bowl, mash the softened butter with the crushed garlic, chopped parsley, and salt.
  2. Prepare the Mushrooms: Clean the mushrooms and remove the stems. Fill the mushroom caps with the garlic butter. If you’re prepping in advance, pop them back into the fridge.

Step 3: Cooking and Assembling the Burgers

Now it’s time to bring everything together and cook our delicious burgers.

Method:

  1. BBQ or Grill: We love barbecuing our mushroom burgers on the beach. We used the incredible Cobb BBQ. And their Coconut husk bricks, also known as Cobb Cobblestone. Goodbye parofin petrol coal and hello coconut bricks. 

     However, you can also grill them or fry them in a pan. Cook the mushrooms until they are tender and juicy.

  2. Optional Cheese: If you like, add a slice of cheese on top of each mushroom while it's still hot so it melts nicely.
  3. Prepare the Buns: Brioche buns are fantastic for this, but today, we’re using pita breads which work wonderfully too.

Step 4: Assemble and Enjoy

  1. Layer the Ingredients: Place the cooked mushroom on your bun or pita bread. Top it generously with the seasoned onions.
  2. Add Fresh Vegetables: You can add lettuce, tomato, or any other vegetables you desire for extra crunch and flavor.
  3. Serve: Enjoy your burger with a side of fresh beach air and the sound of waves crashing.
